Generally, once everyone is locked in I change windows to a web browser. Then once the loading screen starts, it takes place of what I was looking at. This would be fine if it let me change back via alt-tab (command-tab), but for 20 seconds or so after the loading screen starts, it's just frozen. I can't see the increases in loading percentages, I can't alt-tab, etc.

Same prob, it's not such an important issue, but a fix would be great !

Yeah, the initial loading screen sucks. It takes 10 seconds on my machine before it gets the loading screen "loaded" so that it will respond to cmd+tab. One thing I will note is that it does seem to remember that you hit cmd+tab during this time period, so it will eventually switch out once it reaches this point.
