Describe what you specifically would like to improve or get help with:

These are the settings I have been streaming with before I upgraded my internet. The stream quality was fine with no fps drop on my part, however the quality of the stream was slightly blurry/grainy, not severe at all, but something I would like to improve if possible. My main question is should I change any of these settings now that my internet is much faster than what it used to be? Or is there any other general advice you may have for me as I am rather new to the technical side of Xsplit.

The problem is probably the difference in your desktop resolution and the stream resolution. Assuming you're streaming your entire desktop, your screen is being compressed to fit the stream, which is causing the slight blur effect.
