Why do people build double or even triple Doran's items?

Um...I think you are missing the mark by a fair bit.

2 or 3 Dorans items help you keep up sustain for the early part of the match, since 3 Dorans items will give you 300hp plus their individual stats they tend to help.

Especially on an ADC who isn't facerolling their lane, waiting for a BF sword will get you killed and you support, b uying 2 Dorans blaeds with the hp extra AD and the lifesteal will help you sustain in lane, increasing your farm and meaning you actually get the BF sword sooner

Ahri with boots 2 dorans does a lot of combo damage. So much easier to harass and kill when you don't have blue buff.

They give you so many stats, and you really don't lose much gold (475 gold if you bought two, 710 or so if 3), and they're really, really useful, and you won't need those slots much until you've finished 2 big items anyways.

It can help, especially if you're getting overwhelmed or a little outlaned because of the extra sustain. When you have say double doran's blades, vamp scepter and the right masteries, you'll have around 19% life steal, and 160 extra hp....etc. Those additional stats can help for a more aggressive playstyle, and while yeah, they can hinder the player by in the long run losing a few hundred gold, they really help the early game better.

It's also about knowing when to sell said doran's items. I personally think a Doran's blade shouldn't still be in your inventory come ~30 minutes into game, unless you've been overfed and have most core items and a fair amount of extra gold. When you get a little fed like that, it can just stay. Otherwise, you should sell it to make space, or get the last 200 gold for your BT, IE, PD, w/e item's next. Sure, the opponent might get a full build somewhat faster, but you have that slight advantage of survivability early on. It truly is a lifesaver.

But the game rewards defensive play.

Being aggressive is incredibly dangerous.

If you buy a bunch of Doran's items and go aggressive to try and make them pay off, the enemy team would have to be comatose not to punish you for such insolence.

Sounds like you're conveying personal preference/playstyle. And if it was 8 months ago when everything was just a farm match, I'd agree with you. But look how much early ganking/counterjungling, strong early lane harass (ask any Vayne what it feels like to go up against a Ezreal), even strong pushing (Oh hai there, Korean meta) make up the early game. Aggression is way, way up from where it's been before, which is what allows these items to maintain their strength even after getting both cost and stat nerfs.
