Olaf, as a melee champ with no dash or hard CC, can have a very hard time in lane against more than a few champs.

The three ways that people have typically worked around farm issues with melee champs have been:
1. get a lane partner who could be 2v1ing this anyways.
2. jungle
3. build gold generating items

to lane olaf, you are either going to need an easy lane (not guaranteed) or a build designed to work in the worst of circumstances. You can tweak the build as you please if the lane is a pushover.

skill build for lanelaf
1. Q
2. E
3. W
after that you can go R > Q > E > W OR R > E > Q > W

maxing Q before E lets you harass and last hit from a distance and makes your only CC more powerful.
Maxing E before Q lets you dominate the bushes against champs who can't burst as hard as you. Only suggested if the lane is balanced or in your favor.

first item: regrowth pendant + hp OR dorans shield OR dorans blade
pendant -> philo stone if you feel you need a lot of gold/5 items, early hp regen and mana regen to spam your skills with.

now you build boots. mercs or swiftness, occasionally tabis, none of this berzerker ****. Who builds AS for laning?

Now you start your first big item, a very important item for olaf: randuins omen. You get it for the armor and the slow, and it actually builds out of something useful so you wont be stuck with junk in the meantime.
build a heart of gold and an avarice blade (which builds into olaf's second favorite item).

At this point, the laning phase may have ended, so you can go off to build what you really need.

- Ghostblade: olaf loves every stat this thing gives so it is highly efficient for him. the active is just icing on the cake.
- randuins: if you need more armor (enemy DPS, tower diving), or if you need the slow
- FoN: start with the negatron cloak and leave it at that until you get other important things finished
- starks fervor: every team should have at least 1, and olaf just loves the stats. Since you aren't building any AS this gives you a nice boost, more lifesteal, and a crazy armor reduction aura.

for you last item, there are many options.

infinity edge: more damage. this + ghostblade + masteries (you should have 3 in offense at least) + green pot = 50% crit chance. and you lifesteal 41% of it.

bloodthirster: a lot more damage and lifesteal. 66% lifesteal is evil when you have high armor / mr. Makes soloing baron easier.

bloodrazor: if the enemy team has hp stacking nubs. or if they are armor stacking.

thornmail: if you need more armor for some reason... or if they have a 100% crit chance yi...

banshees veil: if you want more MR / hp / mp and a bubble.

ANOTHER FoN: even more MR, more movespeed. At this point you don't care much about money so you just want to get as much as you can out of your last item slot, so getting 2 FoN is not that bad an idea if the enemy team has too much magic damage.

atmas impaler: a nice mix of offensive and defensive stats for a nice price, but not the best choice.

frozen mallet: if you really, really need its slow. IMO if you need a frozen mallet to keep up with anyone, you shouldn't be playing olaf.

Wise build options here. I sometime sub in a frozen heart for the CD reduction. A really nice dps boost to Olaf and his "E". Also solves mana issues on him, if you have them .

I would like to add that the atmas/warmogs/frozen mallet build on olaf is scarier than most things you can find in this game. If anything, that is the build that is most likely to get a pentakill

BUT

there is no realistic way to farm up all the items in an average length game when you aren't getting fed, and while you are farming the items you are a lot less effective than with a different build.

with jungle olaf and a couple of sucsesful ganks i get the atmas/warmogs/frozen mallet combo at around 35 minute mark. usualy about half my normal games i will get it.
