For PVP games? I tried Draft and it kept giving me an error saying the players didn't have enough characters?

Blind Pick: Each player can pick whatever champion they want to play. No one on the same team can play the same champion. You can't see what champions the other team is picking, hence, "Blind Mode".

Draft Pick. Each team takes turns banning 2 champs that no one on either team can play. Then, each team takes turns picking champs. Once a champion is picked, someone on the other team cannot pick the same champion.

Those are some of the basic differences.

Also, you need to have at least 14 champions. Enough for 10 picks and 4 bans.

Remember, it's 14 including the 10 that are free that week. So if you only own 4 champions and none of them are in the free rotation, you can play draft.

But also remember, that you should be able to effectively play all 14 champions that are counting towards your total, in case you get stuck playing someone you weren't intending to.
