DPS... just what does that mean exactly?

Damage Per Second, yes. But can't an AP build produce damage... per second?

Can anyone explain how AD builds are sometimes called DPS? (ADPS?) (APPS?)

It's a dumb term. Just call people who deal sustained damage (regardless of AP/physical damage) carries and people who do burst damage (regardless of AP/Physical damage) nukers.

Because they tend to provide a fairly steady damage over time when compared to a caster using all of their spells and waiting for the longer cooldown ones to come back up again.

I don't refer to DPS as a trait of a champion. DPS is a statistic for damage per second, at least to me. Everyone produces DPS. It's the amount that determines your viability as a damage dealer.

A champion that generally not that effective once the other team realizes there's an item called "Thornmail".

Quick question.

Is Poppy or Karthus a DPS?

It's constant damage and not an average.

Which is why it's "Damage per Second" and not "Average Damage over 2 Seconds."

DPS is a term that comes from MMORPGs and its part of the Tank/Healer/DPS triad, within that context, it makes sense, the DPS character is the one built to cause the most damage, be that physical, magical, sustained, burst, focused or AOE.

But league of legends is a different TYPE of game and terminology should be different for it, since all/most of the heroes are capable and expected to deal damage.

TL;DR: I like the terms sustained damage and burst damage

You call them dps because they have a focus on dps... attack damage will produce higher dps than will abilities in this game. Since ability power gives you lower dps, if you say you're building for dps, it means you're building to maximize dps, aka attack damage (or sometimes attack speed).
