Assassin is normally a squishy champion with large burst or damage output, and the ability to assassinate. (speed, cloaks are the key factors here). Twitch is a assassin, hes very fragile but has massive damage output.

Melee is what it says, the champion is melee ranged with sometimes 1-2 ranged skills.

Ranged is the same as above, they have a range with most skills and auto attacks.

Nukes are champions which have high burst, but poor constant damage. Annie/brand/veigar can do a ton of damage quickly, but really can't do much while skills are on CD.

Tanky DPS are champions that have good damage, but not compared to a carry, and high survivability, but not like a tank. They can be noted as off tanks, and generally most dangerous to carries. Please remember just because you are very difficult to kill, doesn't mean your a good tank to your team. Enemy teams should always fear a proper tank.

A carry (AP/AD) are champions that mainly focus on damage, most AP champions tend to be nukes, but there are some expections. AD carries tend to be constant damage. Their main job is to do the most damage to the other team.

CC means crowd control, like stuns/silences/slows/snares/etc

A tank are champions that are difficult to kill, and have dangerous CC abilities, and normally the one leading their team into battle. Amumu is a good example, he has a stun, and his ultimate is a large 2.5second snare.

cc = crowd control. "hard" cc is a stun or suppress. "soft" cc is a blind, slow, or silence.

assassin and melee are common english words... look them up in a translator.

a "carry" is a champion that scales very well into the late game and can "carry" the team to victory. a lot of carries, called "hard" carries, have bad early games like tryndamere and jax, so they also need to be "carried" by the team to get to late game, also called babysitting. "soft" carries have good early games and can fend for themselves like ashe. a "carry build" is a build that isn't effective until later.

a "nuke" is a one-time damage spell, so a "nuker" is a caster that uses nukes.

a "tank" is a champion that can initiate, focus enemy attention on himself (instead of on your carry, for example), and soak up enough damage to stay alive.

There's a comprehensive list of what the game means when you pull up a champion and it gives you two or three 'type' statements.

Note that this is in regards to what the game listing means, and does not always mean exactly the same as what the forums or other players do. For example, "Tank" according to the list is slightly different from what shubomber said. Both explanations are accurate, mind you.
