how to 1v2 a lane?

Anivia is a good pick for 1v2. I do it fairly regularly. Just be careful not to overextend yourself, and you should be fine.

Champion with either good and cheap aoe, high survivability, range or ''no mana/good mp5/energy...'' are good choice. Teleport is an great choice for 2v1 imo.

-Mordekaiser got his shield and clear waves like no tomorrow. The level advantage actualy make you a threat in 2v1.
-Gragas got a huge mana/hp regen and survivability, with many aoe.
-Nasus got passive lifesteal, aoe, his slow can save you from a tower dive. He lack range but a solo lane benefit him greatly.
-Anivia huge aoe and egg.
-Morganna large selection of aoe with her passive give her a good hp regen.
-Renekton No mana, high combo burst, aoe and hp regen...

Alot of champion can stand 2v1. But what really make it easy or hard is the 2 others. I'm usualy fine 2v1, but once i was against MF+Caitlyth. They push hard, fast and FAR. even with the occasionnal help of the jungler they got the tower before long.

Urgot isn't so bad either. If the enemy is pushing you hard just land an E and bring one of them down to half.

akali also works well against most combos as long as you can last hit and tower hug until at least lvl 6.

You need someone with AOE or range.

AOE is easier, you clear the creeps and keep the wave at your turret so you don't get zoned out. Ranged AOE is the best, like Nasus, Morgana. Melee AOE like akali, will meet some harassment.

If you're ranged, attack one enemy champion quickly while in range of their minion wave. The minions will change targets to you, and run back quickly. This will effectively move the entire minion wave forward and closer to you for an easier farm, so you don't get zoned.

basically hug tower actually, not all champs can fight back in 1v2 situation.

If you are in a lane with 1x2, and you can see that the other champs are going to pound you because you simply don't have the right champion, then beg one of your teammates to switch with you. Of course, the same is true in a 2x2 or 1x1 and you are clearly outmatched or when you seen a better match. It is a team game, so you should work with your team to get the best match ups for your team to win.

If noone will switch, then sit back, tower hug (even BEHIND the tower if you have to), last hit minions and don't die. You should level up at least as fast as they do. You will lose the tower first, but use that to your advantage by having your team gank when they try to push the next tower and have no way to fall back.
