Nearly all solo-mid 1v1 fights are won by who hits level 6 first. Most everyone (~80%?) plays very conservatively in the solo-mid fight...harassing when they can but never over exposing themselves, which equates to both champions being nearly 75-100% hp by the level 6 mark. If you hit the level 6 mark first, you can usually gank them, in which case, you get to solo farm the lane for a few more waves while they wait to respawn on top of getting all the exp for the kill. So by the time they get back (at level 5, because you hit 6 then ganked them immediately), you are most likely level 7-8'ish to their level 5...hardly seems fair from then on.

TLDR: Level advantage allows you to use more against your 1v1 opponent than they can against you. IE: Ryze vs. Ryze. Whoever is level 3 first, can technically cast all 3 spells while the other person can only use 2. This usually results in the level 3 player gaining a significant dmg advantage in harassment. At level 6, this is compounded by ultimates (IE: Ashe vs. Ashe...is almost completely won by who gets ECA first and hits the other person.)
