Im just wondering if there are any differences between these 2 normal modes besides not knowing the enemy composition and knowing. If thats the only difference, what do you guys recommend for more serious and better toned players?

About the difference : draft allows you to influence the other team (bans) and counterpick (pick order can be important). More subtle : you can also see if the other team is going for certain strategy. If you see snowballing like yi/kat -> you pick a lot of cc or you avoid overly squishy champs (or buy defence for them) to keep them from snowballing (there was a tournament match that was lost because one team refused to give that first kill to AP yi. Every one left at 30% hp or with GA poped, but no pentakil for yi). Same goes for AOE team comp. Tanky comps, Push comps. Arguably, this is mostly in higher level of organisation. Premades or high elo.

With blind you get what you get. With draft, if you see the enemy picking Lux or Brand, you can pick an anti-mage like Fizz or Leblanc. That's the main advantage.

Draft for all the reasons mentioned above.
Another reason not yet mentioned:

Draft trains and prepares you to be with trolls and noobs who will call/yell roles (and sometimes fail at it). That way, when you start playing ranked (I assume in the 1200s), you won't be surprised that at least 3 people will say "adc or feed"

Draft. It prepares you for ranked. Jumping into a ranked game without having played Draft is pretty confusing imo.

I do prefer draft since you can better prepare yourself against the enemy team and have the opportunity to talk strategy during champ select.

With draft you learn the game alittle better and slightly fewer troll builds or wierd lane comps.
