The adrenaline rush she experiences dueling a worthy opponent allows her to ignore her wounds.

The champion remembers everything, up to including the point where their hp reached zero. Higher level champions take longer to revive because of their advanced gears and extra memory, and not to mention to allow the body and mind of the newly conjured copy to adjust to the pain of all their previous deaths all over again. It is said that "patches" that are released every few weeks attempts to balance all the champions not to keep the competition fair, but to prevent overuse of any specific champion, for it would be too cruel for said champion to experience the agony of death so much more often.
It is common lore knowledge that champions in the league are not the actual champions. They are apparitions on the champion, which lets two be in the same game or have multiple games happen with the same champion. Champions like fiddlesticks and xerath are far too powerful to replicate in the matter of a minute~ or less, mostly because they know so little of the champions. The best they can do is suppress the power of these beings during the summoning process.

Using magic or specialized skills requires a high level of brain power. Since the brain uses a system of nerves and electric pulses to control the body and chi, a powered electric shock can do anything from negate their ability to use higher difficulty battle skills or spells to locking their muscles in place, keeping them from doing anything(kennen passive).

Why is it that Udyr's Turtle stance does not allow him to critically strike?

Lee sin burned his eyes out in his protest where he stood in fire for weeks. He was in the hospital for months.

Why is it that Udyr's Turtle stance does not allow him to critically strike?
Critical Strikes often require precisely aimed attacks at enemy weak points or particularly strong attacks. In his turtle stance, his stumpy fast doesn't allow him to hit any weak spots, and his metabolism as a turtle is far too low to allow him to exert the extra strength needed to pull a critical.

How is Zyra able to create different plants from hitting her seedlings with different spells? How does Deadly Thorn make it grow into a thorn spitter while entangling vines make it grow into a vine lasher?

Zyra's seeds are somewhat sentient. They do not grow unless they receive the proper signal to do so, which would be either of Zyra's damaging abilities. The "signal" is transmitted through the ability via the way the attacks are centered on roots. One sends a row of roots, the other sends up a blossoming flower.

Why can ignite set brand on fire even though he is a being of fire, and why can Teemo blind Lee Sin when Lee Sin already is blind?

It doesn't set Brand on fire. Rather, Ignite is a form of energy caster that gives powerful subjective pains to a combatant. Like Swain's Torment and Malzahar's Malefic Visions, Ignite is a pain subjective spell that can make the target feel like it is on pain.

For Teemo, he has two poisons. The ajunta poison from Kumunju and the carusa poison the Yordle Military from Bandle City gives out to the Scouts of the Mothership. The carusa poison seeps into the brain and blocks certain nerves in such a way that it can null any of the five physical senses: see, hear, taste, feel, and smell. So Teemo, when the Blinding Dart filled with carusa poison, can block Lee Sin's ability to use the other 4 senses, causing him to miss his basic attacks.

Summoners work beneath Baron Nashor's little corner of the Summoner's Rift to rebuild a brand-new, working model identical to the one that had just been slain. The actual Baron Nashor has not been seen in some time, having been forcibly removed from the premises by higher-ranking Summoners for being far too powerful for even a team of five of the most powerful people in Valoran to take on.

Why is there a respawn timer?

There is a respawn timer, because the summoners must channel the energy they are using to recreate their fallen champion. The stronger the champion, the more energy used, because a summoner would need to insert back all of the experience the previous champion had into a new body. However, with case of Zed, instead of him dying, he needs to recover from his wounds in a different dimension, and is able to come back rejuvenated.

Why do Akali, Shen, Zed, and Kennen lose health when they are around each other?

Because the ninja law states that ninjas are stronger when they work alone.
