That is actually quite terribly inefficient. You'd get far more effectiveness out of Giant's Belt, BF Sword and Trinity, because you could build Belt into Warmog's or Sunfire (both of which are good on Wu) and the BF Sword could go into Infinity Edge (to make use of the crit on Trinity).

Builds will still fluctuate, due to strategy. Getting shut down in lane as an AD carry vs an AD carry? Man if only there was more AD + armor items.

Man, AD casters are really lacking in itemization, if only there was an AD heavy gunblade.
Heck, not only would that be great for AD casters, but would also open a build option for MF, graves, or EZ.

We need more items in the game, more unique item passives and stat variation which will give us more ways to build characters. As a person said earlier in my skype call, Characters should counter other characters, but items in MOBA genras are there to counter strategies.
There are itemization holes, which are different from perfect itemization. Athene's Chalice is a good example of this. Before it, the only MR/AP item was Abyssal, and it builds from T2 building blocks and has an expensive combine cost. Chalice of Harmony is an okay early game item, particularly for mana sustain, but having no late-game usefulness nixes it. So, they give it an upgrade path involving AP and it now legitimately fills a spot, without negating the usefulness of Archangel's/RoA (because having more max mana means you don't get low in the first place, which is the situation where Chalice starts helping).

There is the rumored AD caster item that might double as the Armor shred aura as well, although it's probably causing hell for Riot to design it because (a) CDR is not balanced on RADCs, which is why all CDR items suck for them, and (b) Spell vamp on an AD caster item would be hellish on hybrids, especially Akali who gets more spell vamp for AD. Not to mention a hybrid could get both versions and have ungodly power and sustain.

Filling itemization holes lets you counter-strategize. Screwing around and adding a bunch of mirror items either adds a ton of useless items to the game, or forces champions into a "best build ever" which is equally bad.

Lichebane, but Athene's was really added primarily because there was little reason for most champions to take Chalice anymore and because Lichebane is not that good for players and champion who cannot transition auto-attacks into their combo.
