Two Mid

When there is no jungler people normally send 2 top, 1 mid, and 2 bottom. Why is this? Wouldn't it make sense to have two people in mid instead of top because middle is closer to dragon and is closer to both lanes for possible ganks.

Two reasons to maintain the current meta:
It provides safety from being ganked by a jungler since it would be a 2v2. And with the top lane's towers having a greater distance between them there is more opportunity for ganks from over pushing the lane. Rather than in mid where the towers are closer together and a gank would have less time to be executed.

Or is it because if you die at top there is a longer travel to get back to the lane and the tower would take more damage than to die in mid with the shorter walk to return.

While these are some good reasons to do 2 top, 1 mid, and 2 bot for non jungler teams I expected at least some games to have 2 in mid, but that's never the case.

It's because Mid is so small. If you had two heroes there, they'd just as likely get in each other's way. Also, if you push mid too much then it's still a totally gankable lane.

Bot's too long for mages. Their escapes are often dashes/blinks rather than sustained escapes. On top of that, there are less routes to escape ganks. On top of that, ganking sidelanes is more of a mage / assassin kind of thing by nature than an AD carry kind of thing. (with the burst damage, mobility, lower farm-reliance).
