That doesn't work so well if Galio builds Chalice (which is extremely common).

I would say just lane switch. I think laneswitching is way under used.

If you insist on sending an AP mid, get a lot of ganks and farm passively. Just avoid him until lategame, basically. You could send an AD mid if you manage to get your team to do it. But that's out of the scope of this thread.

I can think of a few extremely odd circumstances in which an AP mid beats a Galio, but all of them involve some failing on Galio's part.

I'm gonna guess that putting a ranged AD mid also might not be that bad of an idea. Basically, just put your AP mid at bot with the support and give your ranged AD mid, I'm guessing.
Tristana I know can poke pretty well and does really well with the farm from a solo lane, but she does explosive shot magic damage.
Sivir does all physical damage and even has a shield for Galio's spells, so she could be a good pick.
