I mean, there's the story of Garen and Katarina for instance, which has nothing to do with Fizz's story. So, if we were to make a main character, it'd have to be someone who is:

A) Not really connected to any major players or places and
B) Can easily be shoehorned into everybody else's story

After looking over the list of champions, I only see one person who qualifies on both points: Jax.

I did not see a champion coming out of your analysis, pleasantly surprised. Jax would make for a good image for te reasons he listed as well as

C) His connection to the league- [could divulge how he used to use weapons/how he is forced too in order too save the league]

However I feel there is two distinct situations that would need to arise for a league of legends show to be able to cover the vast collection of champions....

[ tldr- read it if you are interested in a league of legends show that could actually make sense//if not creative ways too incorporate large groups of champions into easily followed story arcs]

Option 1] Focus on the founders of the league and the maintaining of the league.
What this allows is:
A] Easy interactions with the rule sets, political climates, goals/aspirations of the league, among other important lore points.
B] Easy interaction with all of the champions' lore. This is so because it can follow them hearing rumors/scouting/recruiting various champions from the various areas. This allows for interaction with a vast majority of the not only the lore but champion pool. For example imagine that they hear of a brave little yorlde and go to the yordle village to invite glorious teemo. You can easily show a vast majority of the yordles and how teemo interacts with them outside of the league. For less well known areas or less interlinked champions ( wukong) you can use entire episodes to highlight these "unique" characters.
C] With this method the lore is easy to follow and gives a sense of a meaningful story line.
D] This also easily allows for interactions of the variety of cities/wars by getting a chance to highlight each one separately, and multiple times. For example the recruitment of garen could involve a flash back of him fighting against the executioner brothers. Than in a later episode in the recruitment of swain there could be a direct discussion of why that battle between demacia and noxus took place from the garen episode.

Option 2] Take the style of the anime baccano!
Reasons
A] It does a good job at linking a large variety of strange characters together.
B] This could be done as either a league based or lore based idea. For example league ( focus on 5 distinct champions that are lore related and 6-7 episodes of them and their stories and how they interact with one another. {<5 because that is how many are on a team>{ Darius, Draven, Garen, Lux, and Lissandra} than interlink a struggle between demacia and noxus with family ties and the need to work together. Liss thrown in as an example of a over arching third party that the 2 states equally distrust and group up with each to watch] It would be possible to string multiple of these together in 5-8 mini series covering each of the major teams in a tournament with interlinking episodes between these story arcs of the tourney actually taking place. The other side is directly lore based showing a handful of characters ( for example the high command of noxus swain/leblanc and others) and show a variety of other characters seemingly random involved in their stories( which as the story progresses is revealed as not so random. Example the recruitment of soldiers for noxus brings the executioner brothers into the shadow isles where they come across lucian and kill him since they will not join-- while this is showing their is imagery of thresh in which later it is revealed in exchange for lucians head thresh will fight for noxus instead of darius just wanting to behead lucian for fun.
C] In this model there would be no main character in the traditional sense but more of guiding characters. For example Swain is main character for a noxus arc, J4 for a demacian arc, an entire arc of the ninjas could examine a vast collection of characters that are not directly related to any political identity with shen as the main, so on for each major faction

It would be an episodic series with different arcs for different factions tying together into an epic struggle.

There would be more then one main character.

It should be divided in chapters, each with with a different set of champs. once a chapter is over, we just move on to another story across the world.

IE: Diana, Leona, Pantheon. Then Lux, Garen, Katarina. Then Evelynn, TF, Graves. Then Vi, Jayce, Cait. Then we mix 2 of the groups in a conflict.

Leona, Lux, Riven, Ashe; all those good and lovely ladies.

And I guess Ezreal to add in a token male role. But Leona would be my protagonist.

No jarvan? He would be best friends with garen(football captain) and have two girls that like him yet he doesn't really care for them(ends up with one and the other is heart broken) Xin could also be a friend. His father is a famous actor and living up to his name is a challenge he has to overcome by doing something awesome. Also he's kinda a wimp because his lack if self confidence in the shadow of his father.

Lux is a cheerleader that is a close friend to him because of Garen, but because of Garen they can never really be together without Garen being upset. They potentially get together and then drama ensues.

Lux will be really close to Jarvan, they can always talk. She gets jealous when she hears of Quinn or shyvana
